When to bottle is an art form. We initially planned on bottling a couple of weeks prior, but with some tastings straight out of the barrel, it was decided the wines needed just a bit more time to age and soak up all the flavors the wooden aged barrels have to offer. After a little longer and another round of tastings… we knew… it was time!
